Bernard Kaar, who’s spent years researching the history of saffron and still more years cultivating the world’s only bio-dynamically certified saffron, is one of the Wachau’s most important producers. Visit the Weinessiggut Doktorenhof estate for a special vinegar tasting. Founded by Georg Wiedemann some 30 years ago, Doktorenhof produces vinegars from premium wines following old traditions that have been passed on from generation to generation. Almost 100 percent of the work is done by hand, from the natural cultivation of ripe, dense base wines to the careful expansion of the vinegars in the vinegar room, to filling, corking, binding, waxing and careful packaging in hand-blown bottles and flacons.

The Iraq Al-Amir Women’s Cooperative aims to help local women become financially independent and raise their standard of living by increasing their income while simultaneously preserving local heritage. Visit the local Calcutta Rescue, which serves the area’s underprivileged children. They provide much-needed services at no cost to the neediest people of Kolkata and West Bengal—regardless of gender, age, caste or religion—through health clinics, schools, vocational training and preventative health programs. You’ll hear about the impact the Calcutta Rescue has made over the last 30 years and get some insight on some of their current projects.
